Preparation
- In a bowl, thoroughly mix together the ground meat, egg, salt, black pepper, minced garlic, chopped onion, and parsley to create a smooth, even meat mixture.
- Spread the meat mixture on one side of each tortilla.
Cooking
- Heat a pan over medium heat with a bit of oil.
- Place the tortilla meat-side down in the pan, cooking for about 5 minutes until the meat is cooked through and starts to brown.
- Brush the top of the tortilla with some oil and carefully fold it over using a plate or a second pan.
- Sprinkle grated Gouda cheese on top, add ketchup, and place the sliced bell peppers.
- Cover the pan and cook until the cheese melts.
- Remove the tortilla from the pan, slice it up, and serve hot.
Notes
For storage, keep leftovers in an airtight container in the fridge for up to 2 days. Reheat on a skillet for the best texture. You can also add chili powder or hot sauce for a spicy kick, or swap ground beef for lean turkey or chicken for a healthier option.
